All the grapes used for our sparkling wines are coming either from Imereti, Shida Karlti and since harvest 2021, Lechkhumi regions.

All our traditional method sparklings go in bottles with natural grape juice from the next harvest. 

Base wines are now staying 1 year in barrels and Qvevri before to be bottled. 

 

Indeed, those 3 regions allows grapes to mature slowly under cool climatics conditions allowing the grapes to gain richness without loosing freshness.

 

Shida Kartli's soil made of limestone gives to our wines minerality and Imeretian clay confers power and richness. 

Our Sparkling wines are made according to the taditional method used in Champagne.  However all our wines are fermented on their indigenous yeasts without any interventions that could compromise the authencity of the wines.  

Wines are fermented and aged on lees in Qvevri or old french oak barrels coming from Champagne Egly-Ouriet and Burgundian Domaine Prieuré Roch, Domaine Hubert Lamy, Domaine de Villaine among others ...
